banana spirit

I was amazed about the intense taste and flavour I got with this recipe:

1 1/2 litre of tasteless alcohol (Wodka, 38%vol deluted to 10.5%vol), in the pot and three very ripe bananas (cutted in slices, without peel) above the boiling alcohol. I used a pot still for distilling.

We have a lot of very ripe bananas. Would it be possible to make a mash with bananas?

Yes, of course. Pulpify the bananas and add approximately the same amount of water. Correct the pH to 3,5, add yeast and the fermentation will start after a few hours. If you want to get more alcohol you have to add a little bit of sugar.

4 cases of bananas (160lbs)(18-20gl.pureed)
40lbs. light brown sugar
40gl. rainwater
1lb. distillers yeast

After fermentation distill in pot still with thumper keg 1/3 the volume of the still. Very high proof 140-165 banana brandy. Substitute molasses for sugar and it's banana rum. Blend it down to 105 proof for consumption.
